The Role: Under the supervision of the Chef the Senior Assistant Cook implements the cycle menu and works alongside volunteer food service staff in cooking and preparing a variety of culturally diverse foods on a variety of equipment according to the needs of daily production.
Serve CRW clients Prepare items for agency special events Responsibilities: Meal Preparation(90%) • Assists in the preparation of meals in accordance with the nutrition plans.
• Prepares culturally appropriate foods on a variety of equipment and adheres to designated cooking methods in accordance with New York City DOH food guidelines.
• Understands and complies with required portion sizes for specific age groups and completes work assignments in a timely manner.
• Ensure that foods are cooked properly, looks appealing and that there is ample food for the required servings.
• Helps to maintain established standards of sanitation, safety and food preparation and storage as set by the local and state departments.
• Maintains updated inventory of food and kitchen materials on a daily basis.
• Track and monitor records pertaining to temperature logs, refrigeration log, and sanitation schedule.
• Must wear appropriate uniform or headgear while in the kitchen or on the premises.
• Operates all equipment according to the manufacturer’s directions; especially safety guidelines.
Notifies the Chef of any malfunctions or damage of equipment.
Other (10%) • Attends and participates in mandated meetings and trainings as needed.
• Performs other duties assigned by the Chef.
• Maintains a clean and sanitary workstation, cleans, stores and organizes dishware, utensils, pots and pans.
Requirements: • High School diploma or GED and Food Protection Certificate required; • Must be able to read and understand labels, invoices and recipes; • Knowledge of basic math; ability to add, subtract and multiply; • Must understand and follow hygiene standards set by NYC DOH; • Consistent punctuality and adherence to work schedule is required; • Minimum of 1 year experience in food service; 3 years’ experience working in a substance abuse environment preferred; • Knowledge of NYC DOH food safety requirements ; • Demonstrated ability to work in a team environment by developing and maintaining constructive professional working relationships with all employees, including volunteers and clients; • Able to work with minimal supervision while observing principals of quality cooking; • Must be able to follow and change directions as instructed and work well under pressure; • Background check and bi-annual physical examination required.
Physical Requirements • Able to perform physical activities such as, but not limited to, lifting heavy items (up to 50 pounds), bending, walking, and standing for prolonged periods of time up to 5 hours a day.
• Able to work in hot, wet, humid and loud environment for long period of time.
• Ability to work safely with hot water, potentially slippery floors, garbage disposals and cleaning chemicals; • Must have exceptional hygiene and grooming habits.
